1 3/4 cups sugar
1/2 cups vegetable oil
1 cup canned pumpkin (plain)
4 eggs
3 large carrots finely grated
1 cup minced fresh ginger
2 cups all purpose flour
2 teaspoon baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 1/2 Tablespoons ground ginger
2 1/2 teaspoons ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
2 cups chopped walnuts or pecans

BEAT sugar, pumpkin and oil at medium speed with electric mixer until smooth
ADD eggs one at a time, beating after each addition
BEAT in Carrots and gresh ginger

COMBINE flour and next seven ingredients; gradually add to sugar mixture,
BEAT at low speed until moistened.
STIR in nuts
POUR batter into a lightly greased 13" by 9" baking pan
BAKE at 350º for 45 to 50 minutes or until a toothpick inserted in center comes out clean
COOL on a wire rack
Serve with dollop of whipped cream or frost with cream cheese frosting
