1 lb bacon
2 onions chopped
1 T minced garlic
1/2 t cinnamon
1/2 t allspice
1 T chipotle chilli
1/2 c bourbon
1/2 c maple syrup
1/4 c balsamic vinegar
brown sugar to taste

Directions:
Directions:
1. Cook bacon. Drain on paper towel. Keep grease
2. Dice up onion. Cook in 1 T bacon grease. Caramelize onion.
3. Add spices and garlic, cook 1 minute
4. Add remaining ingredients and cook down for 20-25 minute until it looks like a jam like appearance.
5.Add chopped bacon. Cook for another ten minutes.
6. Remove from heat. Check for sweetness, add brown sugar to taste.
