U.C.C. Bread
½ cup warm water
1 pkg yeast
2 cups scalded milk
2 cups oatmeal
½ cup brown sugar, packed
2 tbsp shortening
1 tbsp salt
5 ½ - 6 cups flour
 

1 loaf 9X5x3 and 4 loaes 5 x 2 ½ x 2
The little loaves are great for giving.
 

Directions:
Directions:
Scald milk; add oats, brown sugar, shortening and salt. Cool to lukewarm.
 
Dissolve yeast in warm water; add to milk mixture.
Mix in flour in two additions, mixing well.
Turn onto lightly flour board; cover; let rest for 10 minutes.
Knead until smooth and elastic; round up in greased bowl, bring greased side up
Let rise in a warm place until double (1 ½ - 2 hours).
Punch down, divide and shape loaves *
Roll lightly on surface sprinkled with oats.
Place in greased pans. Cover. Let rise until doubled in bulk (1 hour)
Bake at 400 degrees for 30-40 minutes.
