2 lbs. ground chuck
1 medium onion, chopped
1 (1-oz.) envelopes Ranch dressing mix
2 (1.25-oz.) packages taco season mix
2 (11-oz.) cans shoe peg corn, drained
2 cans pinto beans, undrained
2 cans kidney beans, undrained
2 cans black beans, undrained
1 (14 1/2-oz.) can tomatoes, undrained
1 (10-oz.) Rotel tomatoes, undrained
2 - 3 cups water

Directions:
Brown meat and onion; drain grease. Add all other ingredients and bring to a boil. Reduce heat and simmer 2 hours.

Toppings--in each bowl: grated cheese, sour cream, chopped green onions, chips (we prefer 100% white corn tortilla chips, bite size)
