2 cups sugar
2/3 cup milk
1 tbsp. butter
3 tbsp. peanut butter
1 tsp vanilla
(recipe doubles well and I recommend you do)

Prepare 8” pan by buttering it generously. Set aside. In a large sauce pan stir together sugar and milk. Using a candy thermometer, cook over medium high heat until temp reaches soft ball. (If you don’t have a candy thermometer you can test for soft ball in a bowl of ice water. When removed from the water the mixture should form a soft ball that holds its shape) Remove from heat and stir in butter, peanut butter and vanilla. Stir until fudge loses its sheen and begins to thicken. It will take quite a while to get to this point. Keep stirring! It’s hard to explain how long to beat it – it will feel heavier and when you stir it you can see the circle the spoon makes clearly.

Pour into buttered pan and allow to cool at room temperature. Cut into squares.

Note – do not try to make this on a humid day. It is a rather difficult recipe to master but totally worth it.
