For Filling:
1/3 lb. Italian sausage
1 1/2 lb. beef
4 hard slices of bread
milk
1-2 bunches fresh spinach
3-4 garlic cloves, chopped
thyme (to taste)
basil (to taste)
1 cup parsley, chopped
1 cup dehydrated mushrooms
7 eggs

For The Dough:

4 cups of flour
1/2 tsp. salt
2 eggs
water

Directions:
Cook spinach and strain out excess liguid
Brown pork and beef, cool and run through the grinder
Soak bread slices and mushrooms in milk
Mix together, garlic, thyme, basil and parsley together (use taste as judge)
Make dough: Mix together all ingredients, knead ten minutes, until smooth, cover and let rest.
Grind together, meat, spinach, bread and parsley mix.
Add 7 eggs or until mixture had good texture
Roll out dough so that it is very thin
Spread mixture onto one side of the dough. Pull up remaining side of dough over mixture.
Using a ravioli pin, roll out ravioli.
Place finished ravioli onto baking sheets and place in freezer. Once frozen transfer to plastic bags for storage in the freezer.

Using a food processor for the parsley mix and an electric grinder makes the process easier. You can also use the dough hook attachment to make the dough.
