1 large unbaked pie shell or graham cracker crust
3 tablespoons flour, divided
1½ cup plus 1 tablespoon sugar, divided
1 stick butter or margarine (½ cup)
3 eggs
pinch salt
½ cup buttermilk
1 to 2 lemons (3-6 tablespoons juice)
½ teaspoon vanilla extract

Directions:
Directions:
If an unbaked pie shell is used, prick bottom of shell with fork and rub a mixture of one tablespoon each flour and sugar into holes (this prevents soggy crust.) Bake 10 minutes in preheated 350 degree oven. Reduce heat to 300 degrees. In a small bowl, blend remaining 2 tablespoons flour and remaining 1½ cups sugar; set aside. In a small saucepan, slowly melt margarine. In a large bowl, beat eggs. Beat in sugar mixture. Add butter and beat. Add salt, then buttermilk and mix. Add lemon juice and vanilla, blend well. Pour mixture into pie shell and bake 45 minutes or until set.
