1 LB. Beef, cut into small cubes
1 Large yellow onion
2 Tbsp. Oil
2 Tbsp. Butter
1 32 oz. box Beef Broth
4 cups Water
3 Bay Leaves
1 cup Carrots, dimed
4 Stalks Celery, diced
1 large Idaho baking potato, cubed
2 cups fresh Green Beans, diced
1 green onion
1 cup Sour Creme
Dumplings:
1 cup Flour
1 egg- 1/2 yoke and all white of egg
1/2 tsp. salt
Broth from Soup Pot

Directions:
Directions:
Brown beef and onion in oil and butter.
Add: Broth, bay leaves and water. Simmer together 1 hour.
Add: Carrots, Celery, Potato and green beans. Add water if necessary to cover all ingredients. Simmer over med/hi heat till veggies are tender, about 1/2 hr to 45 minutes. Remove Bay Leaves.
Make Dumplings:
Combine flour, salt, egg and enough liquid broth from soup to make a soft dough. Drop by spoonful into soup. Cover pot. They will rise to the top when cooked, about 10 minutes. Add 1 chopped green onion. Remove from heat and add sour creme.

This was one of my Mom's (Emma Herrman) recipes. I loved this soup! Grandpa Herrman had a farm in Baroda Michigan and my Dad (Bud) would plant rows and rows of green beans. Grandpa Herrman would sell them in Benton Harbor off the back of his truck for 25 cents a bag. I have many memories of going with him to the poor neighborhoods and ringing doorbells to tell them Charlie was here with his vegetables! He was a blessing to many people, even when he walked with crutches and I was able to go and help. My Mom fed our family of 7 with this pot of soup! Those dumplings would stick to our ribs.
