2 medium McIntosh/Cortland or Granny Smith apples (I use Johnny gold and Gala with wonderful results)
1 package 8 count refrigerated crescent roll dough (I use low-fat)
ground cinnamon
⅓ cup butter
¾ to 1 cup granulated sugar
1 cup no pulp orange juice
1 teaspoon vanilla extract
¼ to ½ cup finely chopped pecans

Directions:
Preheat oven to 350 degrees. Grease an 8 inch square glass baking dish. Peel, core and quarter apples. Unroll and separate crescent roll dough. Wrap each apple quarter in a crescent roll and place in baking dish. Combine butter, sugar and orange juice in medium saucepan. Bring to a boil, being careful to not let it boil over. Remove from heat and stir in vanilla extract. Pour over dumplings. Sprinkle tops with cinnamon and pecans. Bake 25 to 30 minutes, until crust is golden and apples are fork tender.
Serve warm, spooning some of the sauce over the dumplings. Great served alone, with cream, or vanilla ice cream.
