1/2--1 lb boneless chicken breast, cut into bite sized pieces
1 medium head cauliflower
1 large egg
2 TBSP cooking oil
1/2 medium onion, chopped
2 cloves garlic, minced
1/2 cup diced frozen carrots
1/2 cup frozen peas
2 TBSP soy sauce
1/2 tsp sesame oil
fresh cracked black pepper to taste
2 green onions, diced
more optional vegetables: celery, broccoli, peppers, spinach, asparagus

Spray chicken breasts with olive oil and cook in oven at 400º until done. Cut into bite-size pieces.

Mince cauliflower into very small crumbled pieces, resembling the size of rice or a bit larger. Better to hand- mince because you don't want it too small.

In a small bowl, whisk the egg and then set aside.

Heat large skillet on medium high heat. Add oil, then onion and garlic. Cook until soft and translucent.

Add cauliflower and saute' until tender, but not mushy soft. Add the peas and carrots and any other vegetables you want and stir until combined. Stir in the chicken.

Add the beaten egg, soy sauce, sesame oil and black pepper. Stir until the egg coats all of the cauliflower and becomes cooked.

Add green onions and stir until everything is combined and heated through.

I added the chicken to the recipe so that there's protein and it's a one-dish meal. You could leave it out, or switch to tofu or shrimp if you wanted.
I literally clean out the fridge of leftover vegetables and add in. Some asparagus and red peppers are good--no need to precook.
You can also buy peas and carrots together in a package in the frozen food aisle--just use one cup total.
