1 STICK OF BUTTER, MELTED AND DIVIDED
1 CAN CREAM OF CHICKEN SOUP
1 PINT SOUR CREAM
12 OUNCES GRATED SHARP CHEDDAR CHEESE
1/2 CUP OF ONION, FINELY DICED OR 1 1/2 TBSP DRIED ONION
CAJUN OR CREOLE SEASONING
CRUSHED CORN FLAKES

IN LARGE BOWL, MIX POTATOES, 1/2 MELTED BUTTER, SOUP, SOUR CREAM, 8 OZ CHEEZE AND ONION. POUR INTO 9 BY 13 INCH GLASS DISH (NO NEED TO GREASE DISH). SPRINKLE CREOLE SEASONING LIGHTLY ON TOP. SPRINKLE CRUSHED CORN FLAKES AND REMAINING CHEESE EVENLY OVER TOP. DRIZZLE REMAINING BUTTER OVER THE TOP.

BAKE AT 400º UNTIL ALL THE EDGES ARE CRISP (ABOUT 40 MINUTES).

I PREFER THE DRIED ONIONS TO THE FRESH AND LIKE TO MIX A LITTLE CREOLE SEASONING IN WITH ALL THE OTHER INGREDIENTS AS WELL AS ON TOP.
