One loaf Italian or French bread

Filling:
8oz cream cheese (softened)
3/4 c strawberry preserves
1/4 cup chopped pecans

Batter:
4 eggs
1/4 c milk
1/2 t vanilla

Directions:
Directions:
Mix the filling ingredients in a bowl.

In separate bowl mix the batter ingredients.

Cut bread into diagonal pieces, about 3/4 in thick. Cut a pocket into each slice, careful not to cut clear through
Stuff each slice with filling mixture.
Heat skillet to medium heat and add small amount of margarine for cooking the toast.
Dip each piece into egg mixture and cook in skillet until browned.

This was one of the most requested breakfasts when I worked at the Blue Mt Mist Inn.

May be served with powdered sugar or syrup depending on taste. Other preserves work well, orange marmalade is my favorite.
