3 lbs. veal leg roast or cut up veal chops into 1-inch cubes
vegetable oil or olive oil
chopped garlic (or garlic powder)
1/4 medium Spanish onion (diced)
2,3, or 4 firm bell peppers, chopped
2 cans (16 oz. each) crushed tomatoes
1 can 16 oz whole tomatoes in own juices, crushed by hand
1/4 tsp. each parsley, basil, and oregano

Directions:

In 5-quarat Dutch oven, heat oil to coat bottom over medium heat. Sprinkle veal good with salt & pepper and chopped or powdered garlic. Brown veal lightly in hot oil. Remove meat from pan.

Add diced onion and green peppers (chopped). Cook until soft. Add tomatoes, parsley, basil, and oregano. Cook 15 mins. Return veal to pan. Reduce heat and simmer 2 hours.
