3 large yukon gold potatoes, thinly sliced
1 1/2 cup thinly sliced black forest ham
2 cups shredded colby jack or cheddar - divided
1 egg
8 egg whites
1 cup - 2% milk
1/2 tsp dried thyme
2 chopped green onions
1/4 tsp salt
1/2 tsp pepper (coarse)
1/2 tsp dry mustard

Directions:

1. Spray a 9x13 casserole dish with cooking spray.
2. Preheat oven to 325º.
3. Arrange 1/3 or sliced potatoes over bottom of pan.
4. Layer 1/2 cup ham over potatoes and sprinkle 1/2 cup cheese over ham.
5. Repeat for two more layers.
6. Whisk the egg and whites into medium bowl until well blended.
7. Stir in milk, thyme, onions, salt, pepper and mustard. Mix well.
8. Pour evenly over ham and cheese.
9. Cover with foil and bake for one to one and half hour.
10. Remove foil and sprinkle with remaining 1/2 cup cheese
11. Bake for five more minutes or until edges are golden brown and knife inserted comes out clean.
