1 medium onion, chopped
1 cup of cooked bacon or ham
1 8oz loaf Italian bread, cut in 1" cubes or 5 cups
2 cups (8oz) shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup cottage cheese
5 eggs
1 1/2 cup milk
1/2 tsp ground mustard
1/2 tsp ground nutmeg
1/4 tsp black pepper

1. Preheat oven to 350º
2. Cook bacon in large skillet until crisp.
3. Reserved two TBSP of drippings. Drain bacon on paper towels, crumble and set aside.
4. Saute onions in drippings.
5. Spread 1/2 bread cubes in 9x13 baking dish.
6. Layer with half each of onion, bacon, cheddar and mozzarella cheese.
7. Spread evenly with cottage cheese.
8. Top with remaining bread cubes, onion, bacon, cheddar and mozzarella cheese.
9. Beat eggs in medium bowl until foam
10. Add milk, mustard, nutmeg and pepper until well blended.
11. Pour evenly over top.
12. Press bread cubes lightly into egg mixture until completely covered.
13. Bake for 40-50 minutes or until clear in center and top golden brown.
14. Cool for ten minutes, serve.
