1 large Granny Smith apple
3 large eggs, room temperature
1/2 cup whole milk
1/2 cup flour
1/4 tsp vanilla extract
2 TBSP butter
1/4 cup dark brown sugar
1/4 tsp cinnamon
Lemon juice
Confectioners sugar

Directions:
Directions:
1. Peel, core and slice apple
2. Whisk together eggs, milk, flour and vanilla until smooth.
3. Melt butter in a 10" cast iron or ovenproof skillet over medium heat.
4. Spread apples in pan and cook for four minutes.
5. Turn apples and continue cooking for three minutes.
6. Sprinkle brown sugar and cinnamon over apples and cook another minute or until sugar begins to melt.
7. Remove from pan from heat, stir apples lightly to coat with sugar and top with batter.
8. Bake at 450º for fifteen minutes or until mixture begins to puff up and turns golden brown around edges.
9. Remove from oven and cut into four wedges.
10. Sprinkle with lemon juice and serve with a dusting of confectioners' sugar.
