8 large eggs
1/2 lb. favorite breakfast meat, cooked bacon, browned breakfast sausage, sliced ham
shredded cheddar cheese
chopped onions
cooked broccoli or fresh baby spinach leaves
1/4 c. milk
salt & pepper
sauteed mushrooms

Directions:
Directions:
scramble eggs in large mixing bowl, add remaining ingredients except for cheddar cheese. Pour into greased muffin pan, sprinkle tops with cheese and bake in 350º oven for 25 minutes or until set. Can be frozen and taken out individually, great low carb breakfast item with lots of protein. Can be modified by adding your own favorite meats, cheese and vegetables.
