3 whole, boneless pork tenderloins or about two pounds
salt and pepper to taste
2 TBSP corn or vegetable oil
1 tsp dried or chopped fresh rosemary leaves
1 onion, (cut in half crosswise)
8 red, waxy potatoes or about 1 pound
2 golden delicious apples
1/4 cup fresh or canned chicken broth
2 TBSP finely chopped parsley

Directions:
Directions:
1. Sprinkle tenderloins with salt and pepper
2. Put vegetable oil in pan large enough to hold one layer.
3. Sprinkle with rosemary and turn pork in the mixture to coat all sides.
4. Place on top of stove, arrange onion, cut side down around pork.
5. Heat pork, making sure the pieces don't stick until browned all over.
6. Place pork in oven at 450º.
7. In meantime, peel potatoes and put in pan with water to cover.
8. Add salt to taste and boil for five minutes.
9. Peel, core and quarter apples while potatoes are cooking.
10. Drain potatoes and arrange around meat.
11. Turn pork and continue baking for thirty minutes.
12. At the end of the thirty minutes, scatter apples around the meat and continue to bake for another fifteen minutes.
13. Remove to serving platter.
14. Add broth to pan drippings and boil
15. Cover pork and serve.
