Ingredients:  
1 TBSP olive oil
1 large onion, cut into cubes
1 celery stalk, cut into cubes
1 carrot - cut into cubes
2 TBSP Italian seasoning
1/4-1/2 tsp red pepper flakes
2 quarts of vegetable broth
1 can (14 1/2oz) stewed tomatoes
2 cans (15-16oz) small white beans, undrained
1 cup tomato paste
1 pound of "in-season" vegetables
Salt and pepper

Directions:
Directions:
1. Saute onion, celery and carrots over medium heat until tender, about five minutes.
2. Add italian seasoning and red pepper flakes.
3. Saute until fragrant about another minute.
4. Add remaining ingredients; broth, tomatoes, beans and paste.
5. Cover and bring to a simmer.
6. Add vegetables, stirring occasionally until veggies are soft and pasta tender; about fifteen minutes.
7. Add salt and pepper to taste.

Green peas
Chopped escarole

SUMMER VEGGIES:
Zucchini
Chopped spinach

FALL VEGGIES:
Cauliflower
Brocolli

*Or you can just increase the carrots, celery and onions
