1/2 cup butter
3 cloves garlic, chopped
1 small onion, chopped
1 - 10oz bag of frozen chopped spinach, thawed and drained
1 - 4.5oz mushrooms, drained
1 - 6oz package of herb and garlic feta crumbled
1 - 8oz cheddar cheese
Salt and pepper to taste
1 - 9" pie crust
4 eggs, beaten
1 cup milk

Directions:

1. Melt butter in medium skillet over medium heat.
2. Saute onion and garlic in butter til lightly browned.
3. Stir in spinach, mushrooms, feta and 1/2 cup of cheddar cheese.
4. Spoon into pie crust.
5. In medium bowl, whisk eggs and milk.
6. Season with salt and pepper, to taste.
7. Pour into pastry shell, allowing to thoroughly combine with spinach mixture.
8. Bake at 375º for fifteen minutes.
9. Sprinkle with remaining cheese and bake another 35-40 minutes until set in center.
10. Stand for ten minutes before serving.
