1 large onion, chopped
2 stalks of celery, chopped
2 carrots
3 garlic cloves, minced
1 pound of dried green peas
10 cups of water or chicken broth
1 ham bone or hocks
2 medium potatoes, peeled and chopped
1 tsp salt (optional)

Directions:
Directions:
1. In hot oil, saute onion, celery, carrots and garlic for five minutes.
2. Reduce heat and add water or broth, peas and ham.
3. Simmer for one hour.
4. Add potatoes and simmer for another thirty minutes.
5. Remove ham bone, cut meat off and return to soup.
6. Serve with crushed pita or corn chips if desired.

I use a ham bone from Heavenly Ham, cutting off excess ham for sandwiches.
