1 cup balsamic vinegar
1/4 cup honey
3 large tomatoes, cut into 1/2 inch slices
1 package (16oz) fresh mozzarella cheese, cut into 1/4 inch slices
1/4 tsp salt
1/4 tsp ground black pepper
1/2 cup fresh basil leaves
1/4 cup extra-virgin olive oil

Directions:

1. Stir balsamic vinegar and honey together in a small saucepan over high heat.
2. Bring to a boil, reduce to low and simmer until the vinegar mixture has reduced to 1/3 cup or about ten minutes.
3. Set the balsamic reduction aside to cool.
4. Arrange alternate slices of tomato and mozzarella cheese decoratively on serving platter. Sprinkle with salt and pepper, spread fresh basil leaves over the salad and drizzle with olive oil and balsamic reduction.
