START:
1/2 pound of ground beef
3/4 cup of chopped onion
3/4 cup of shredded carrots
3/4 cup of diced celery
1 tsp of dried basil
1 tsp of parsley flakes
1 TBSP of butter

ADD:
3 cups of chicken broth
4 cups or 1 3/4 pounds of peeled, diced potatoes

ADD:
3 TBSP butter
1/4 cup flour

ADD:
8 oz (2 cups) processed american cheese cubed
1 1/2 cup milk

FINISH:
3/4 tsp salt
1/4 - 1/2 tsp pepper
1/2 cup sour cream

Directions:

START:
1. In frying pan, brown hamburger, drain and set aside.
2. In kettle, saute onion, carrots, celery, basil and parsley in one TBSP butter until tender.

ADD:
3. Add broth, potatoes and beef. Bring to a boil.
4. Reduce heat, cover and simmer for ten to twelve minutes until potatoes are tender.

ADD:
5. In meantime in small fry pan, melt remaining butter.
6. Add flour. Stir about three to five minutes until bubbly.

ADD:
7. Add flour mixture to soup and bring to boil.
8. Cook and continue stirring for two minutes.
9. Reduce heat to low and add cheese, milk, salt and pepper.
10. Cook and stir until cheese melts.
11. Remove from heat and blend in sour cream.
