2 Pork tenderloins
1 sweet onion, chopped
2 apples peeled and sliced
3/4 cup dried apricots
1 bottle of beer (use a flavorful beer)
1 cup chicken broth (I use unsalted)
2 cinnamon sticks
1/2 cup flour
salt and pepper
1 tsp ground cinnamon

Directions:
Directions:
Mix together flour, salt and pepper, and ground cinnamon on a flat surface. Dredge pork in flour mixture, and sear in heated olive oil in an iron covered pot.
Add onion, apples, apricots, beer, chicken broth, and cinnamon sticks. Bring to a boil on the stove, and then put in a 300º oven. Bake for 2-3 hours. The meat will fall apart. If the sauce needs thickening, mix a 1/4 cup cornstarch with water. Mix a little of the sauce into the cornstarch mixture, and then incorporate slowly into the pot.
This is delicious served with Farro and a salad. Great to cook for a crowd. The longer it cooks the more tender the meat.
