1 1/2 tbsp. yeast
1 1/2 tbsp. kosher salt
3 c. water
6 1/2 c. flour

In a bowl with a lid, combine the yeast, salt and water. Stir about three times and add the flour. Stick your hand in and stir together. Mix just until there are no clumps of flour (the mix will be very wet and sticky). Let it sit for two hours.
When you are ready to make your bread, sprinkle flour over the top of the dough to keep hands from sticking. Grab a large handful of dough, lift it up and cut or tear it from the main ball. Shape it with your fingers into a semi ball, pulling the top skin around and tucking under the bottom so you have a smooth dome.
Lay dough on a slick surface on top of a generous amount of corn meal, which covers an area a little bit wider than your dough ball. Let rise for about 45 minutes. Place a shallow pan on the lower rack of the oven. Place the baking stone on the center rack. Preheat oven to 450 degrees. Sprinkle a little flour on the dough and with a sharp knife make several slits to allow for expansion. Slide the bread onto the hot stone. Pour about 3 cups or so of water into the shallow pan. Cook for 40 minutes.
Leave remaining dough in container, place lid on loosely and put in refrigerator. Stores up to two weeks. When ready to cook another batch, remove from fridge, let sit for 40 minutes and repeat.
