1 bag of Cranberries

Prep:

Cut the orange into slices and then cut off the outer skin until you only have the fruit left.
In a food processor, put in a cup of cranberries at a time and process on low to medium speed. Add apples and process .Then add and process the orange fruit very briefly on lowest speed. Otherwise, you will quickly have orange juice rather than orange relish.
In a large bowl, mix the cranberries, apple, and oranges. Mix in the sugar 1/2 cup at a time. Add the molasses and honey. Taste test the relish as you go. If it is too tart, add more sugar a tablespoon at a time. Be careful as once the relish sits, it will absorb the sugars and sweeten. If the relish tastes too sweet, add lemon juice for tart. Add walnuts, cover, and refrigerate for at least an hour. The longer the relish sits, the more it will absorb the sugars.

Personal Notes:
Personal Notes:
This sweet and tart relish is a Thanksgivings tradition. Originally, we used a hand-cranked food grinder from the 1800s that had been in the family.
Grapes are fine, but citruses do better. Pears are a good option to have as a middle flavor. The molasses is the result of one thanksgiving where the relish came out extremely tart and needed to be quickly sweetened.
