Butter-Less than 1 stick needed
Milk- 1-2 cups
Flour- as thickener, as needed
Salt/pepper/paprika
Peas, broccoli, green beans, diced carrots
(any or all of these will do)
tuna- 1 can per 2 people.
Cheese- be creative! cheddar is always good
or you can spice it up-Irish dubliner or mozzarella
Hot Sauce!
optional- bread crumbs or crumbled chips to add crunch

Directions:

1. preheat oven to 350F
2. cook your rice (1 cup rice to 2 cups of water)
3. In a pot, with a little water, season veggies with salt/pepper. Simmer until veggies are tender)
4. In a saucepan, mix together flour, butter and salt to make your base for the sauce. (lots of butter is always good). Cook on low, stirring constantly, until mixture is an even texture and butter is melted.
5. Add milk to the sauce base.
6. Add cheese to the sauce! Stir while adding the cheese, slowly, to allow cheese to melt nicely
7. Add tuna. Season to taste, salt/pepper is a good starting point, paprika is also a nice addition. Hot Sauce will spice things up and adds great flavor
8. Pour cooked rice into a baking dish, evenly pour sauce over the rice, spread veggies throughout the dish.
9. toss extra shredded cheese+breadcrumbs or crumbled chips on top to brown.
10. bake for aprox. 30 mins or until cheese is melted and slightly browned

I used to eat this all the time as a kid! It"s a great, cheap, and quick meal. Low prep time makes it very appealing on a busy night with homework and such.
