Sausage-any kind cut into 1-inch pieces
Potatoes, Carrots, Onion-cut into bite size pieces
Any other frozen or fresh vegetable available or desired
Use whatever amounts you think is right for the amount of servings needed.
Cooking oil-about 3 tbsp.
Salt, pepper, nutmeg
Epicure spices or Mrs. Dash
Oregano is good and so is plenty of chopped fresh parsley.
You may also add grated cheese

Toss gently together in a large bowl, seasoning as desired. Turn into greased covered casserole, or spread on parchment-lined cookie sheet, it's up to you. Bake at 350º for 45-55 minutes or until vegetables are tender.

In place of sausage, raw meatballs may be used, or cut up fresh chicken breast, or a fast-fry tender meat.
