3 lb. spareribs

2 T sugar
1 tsp. salt
3 T honey or dark Karo Syrup (Mom wrote in the Karo Syrup)
2 T soy sauce
3 garlic cloves, crushed



Directions:
Directions:
In a large bowl, mix thoroughly, sugar, salt, honey or dark Karo syrup, soy sauce, and garlic.
Soak spareribs for ¾ of an hour, turning occasionally. Remove from bowl and place on rack in a roasting pan, adding a few tablespoons of water to prevent smoking. Roast in a moderate oven, 350 degrees for 90 minutes, turning occasionally.

Serve immediately.

Backstory: This recipe comes from one of my mother’s favorite cookbooks called, New Chinese Recipes by Fred Wing. She gave me a copy of the book and it has been ravaged over the years by termites and moths, or both. As luck would have it, her favorite recipe in the book, adapted slightly by her, survives intact. Times change and sadly, this recipe contains an ingredient that’s received some bad press of late: Dark Karo Syrup. But surely, once in a while can’t hurt. These spare ribs were made at every family gathering and holiday that I can remember; knowing my mother, probably even Passover.
