Ingredients: 4 C flour, sifted, Pillsbury All-Purpose 6 tsp. double acting Baking Powder 2 tsp. salt 1 tsp. cinnamon
16 oz. raisins, softened with boiling water 16. oz. bittersweet chocolate chips
3 sticks butter 2 C sugar 6 eggs, unbeaten 2 C buttermilk 2 tsp. vanilla
Confectioner sugar for sprinkling

Directions:Evy Malina’s words, written verbatim: Sift together and set aside: 4 Cups, sifted Pillsbury all purpose flour 6 teaspoons double acting Baking Powder 2 teaspoons salt 1 teaspoon cinnamon
Combine and set aside: 16 oz. raisins 16 oz. of bittersweet chocolate chips Note* {Pouring boiling water over raisins for a second, drain and let dry, use a colander}
Add 4 tablespoons of flour mixture to chips and Raisins and shake together.
Cream well: 3 sticks sweet butter Add: 2 cups of sugar, gradually, to the butter.
Blend in, one at a time: 6 unbeaten eggs. Beating well after each added egg.
Combine and add alternately to Mixture. Blend well after each addition: 2 Cups of Buttermilk 2 teaspoons Vanilla
Add the Flour Mixture Gradually
Stir in: Floured raisins and chocolate chips.
Pour mixture into 2 well-greased & floured pans. {Size of pans described on page 1}
Pre-heat oven. Bake at 350 degrees for 1 Hour.
Place both pans on one rack: Ring pan to the rear, loaf pan in front.
After 50 minutes test with a straw. Each one is different. When cool, sprinkle with confectioner’s sugar.
Special Note!!!- Butter, eggs and buttermilk should be at room temperature.

Notes: Backstory: This is one of my most favorite things that my mother made and like most of her beloved recipes, it also traveled well. She sent me this cake through the mail to wherever I happened to be living on my birthday. I remember receiving it in Amsterdam, Holland to the profound surprise of everyone I knew there. The cake arrived in perfect condition and was also, the best cake any of my Dutch friends had ever tasted, and for those in the know, their Apple Gebbach is nothing to sneeze at. We always thought this cake was going to make my mother rich but instead, and better still, it confirms my feeling that my mom is still here with me---this recipe just fell out of another cookbook, all on its own, as if by magic, I wasn’t even sure I still had the recipe. Thank you, Mom. I miss you.
