1/2 cup (2 sticks) unsalted butter, room temperature
12 ounces bittersweet chocolate
1 1/4 cups sugar
6 eggs, separated
1 teaspoon vanilla
1/2 cup ground almonds or hazelnuts (toast, cool, then grind)
Pinch of salt
Confectioner's sugar
1/2 cup flour

Baking supplies needed: parchment paper

Preheat oven to 350 degrees and put rack in the middle of the oven. Prepare a springform pan by brushing the
bottom and sides with melted butter and cutting parchment paper to fit the bottom.

Melt chocolate and cool slightly. Cream the butter and one cup of sugar together. Add egg yolks one at a time. Add vanilla and nuts. Gradually add chocolate to the wet mixture. Beat egg whites and salt; when they begin to foam gradually, add 1/4 cup of sugar until soft peaks form. Whisk 1/4 of egg whites into the chocolate mixture to lighten, then fold in the rest of the egg whites.

Pour batter into pan. Bake for 30 minutes at 350 degrees until the cake cracks slightly and a toothpick comes out clean.
