1 pound string beans (haricot verts are preferable), with both ends removed

1 red onion, cut in a large dice
1/2 yellow pepper, cut in a large dice
1/2 red pepper, cut in a large dice
1 clove of garlic, diced
Olive oil

Directions:
Directions:
Preheat the oven to 425 degrees. In a large bowl, toss the onion and peppers with two tablespoons olive oil; sprinkle generously with salt and pepper. Put the peppers in a single layer on a baking sheet and roast for about 15 minutes. Stir the peppers occasionally to make sure the vegetables cook evenly. When finished roasting, set aside.

Blanch the beans in a large pot of boiling water for four minutes if using haricot verts, or slightly longer if using regular beans. Drain immediately and immerse in a bowl of ice water to stop the cooking. When they are cool, drain thoroughly and set side.

Just before serving, sauté garlic in a little olive oil for one minute and add the beans to reheat. Put beans in a serving bowl, spoon the roasted vegetables over the beans, and sprinkle with salt and pepper.

The beans can be served hot or at room temperature.
