12 ounces sirloin steak
1 tablespoon cornstarch
1 teaspoon sesame oil
12 ounces broccoli, cut into small florets
4 scallions, sliced diagonally
1 medium carrot, cut into short, very thin sticks
1 garlic clove, crushed
1" piece fresh ginger, cut into very thin strips (cut the brown skin off first)
1/2 cup beef broth (you can use beef Herb-ox cube to make broth)
2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons brown sugar
Noodles or rice to serve

Directions:

Trim the beef and cut into thin slices across the grain. Cut each slice into thin strips. Heat the sesame oil in a preheated wok or large nonstick frying pan. Add the beef strips and stir-fry for three minutes. Remove and set aside.

Add the broccoli, scallions, carrot, garlic, ginger, and broth to the wok or frying pan. Cover and simmer for three minutes. Uncover and cook, stirring, until the broth has entirely reduced. Combine the soy sauce, dry sherry, and brown sugar together and add to the wok or frying pan with the beef. Cook for two to three minutes or until it is cooked, stirring continuously.

Serve over rice or noodles.
