1 ½ pounds snapper fillets (can use salmon fillets)
2 julienned scallions, both white and green parts
2 tablespoons julienned fresh ginger
(Note: I also add other vegetables: asparagus, green beans, and julienned carrots – basically whatever I
have on hand.)
1 teaspoon grapeseed oil (can substitute vegetable oil)
1/4 teaspoon sesame oil
1 to 2 tablespoons soy sauce
1/4 cup white wine

Directions:
Preheat oven to 425 degrees. Place snapper on individual pieces of heavy-duty aluminum foil. Divide scallions, ginger, and other vegetables among the pieces of foil. Cover with fish. Pour liquid mixture over fish. Fold the foil to enclose the fish and the vegetables.

Place on baking sheet and bake at 425 degrees for 10 to 15 minutes, or until the fish is opaque and cooked through (15 minutes for salmon).
