2 ounces gin
1 ounce limoncello
Half a lemon
1/2 ounce of honey (add more or less to sweeten as desired)

In a shaker, add gin, limoncello, lemon juice, and honey. Shake vigorously. Open shaker and add ice; shake again. (By shaking before you add the ice, you let the honey mix with the other ingredients. Otherwise, the ice just solidifies the honey at the bottom of the shaker.)

Pour into a chilled cocktail glass and garnish with a twist of lemon peel.

One of my wife’s favorites, this combines lemon and honey with the background flavor of gin. I like to use limoncello as an added ingredient, as I feel it gives this a more complex taste than the traditional gin/lemon/honey syrup combo of a standard Bee’s Knees. Again, you can adjust the sweetness by adding more or less honey. Just be sure to heed the note about shaking twice, otherwise the honey will stay in the bottom of the shaker when you pour it into your glass and you’ll just be drinking a Knees with no Bees.
