30 amaretti cookies, crushed
4 tablespoons butter, melted and cooled
15 ounces ricotta cheese
1 pound cream cheese
1 pint sour cream
4 eggs
1 1/2 cups sugar
3 tablespoons cornstarch
3 tablespoons flour
Juice of 1 lemon
2 tablespoons lemon zest
1 teaspoon vanilla
1/4 cup butter, melted

Directions:
Directions:
Preheat oven to 375 degrees. Mix cookies and four tablespoons of melted and cooled butter. Press mixture on the bottom of a well-greased 9 x 3" or 8 x 3" springform pan. Place in a 375 degrees oven.

Mix ricotta cheese, cream cheese, and sour cream, and blend well until smooth and creamy. Add remaining ingredients and mix well. Pour over crust. Place in 375 degrees oven for 45 minutes, then raise to 400 degrees for 10 to 15 minutes. Shut off oven and let cake sit in the oven with the door open until cool.
