1 lb. peeled, cubed butternut squash
1 cup grated sharp cheddar cheese
4 oz. macaroni pasta
1 1/2 tsp. olive oil
1/2 chopped onion
1/2 cup chopped celery
1 clove minced garlic
1 large carrot, finely grated
1 large zucchini, finely grated
1/2 - 1 chopped red pepper

Directions:

1. Preheat oven to 350ºF. Coat 6x6 inch baking dish with cooking spray.

2. Cook squash and mash, stir in 1/4 cup cheese. Season with salt & pepper. Set aside.

3. Cook macaroni until 2 minutes fewer then the recommended cooking time. Drain and run under cold water in strainer.

4. Heat olive oil in skillet over medium heat. Add onion, celery and garlic and saute 3 to 5 minutes or until translucent.
Stir in mashed butternut squash. Add carrot, zucchini, red pepper and pasta.
Stir until blended. Pour 1/2 of mixture into the baking dish, then spread (sprinkle) 1/4 cup cheese. Add the rest of the mixture on top and spread (sprinkle) the remaining cheese.
Bake 20 - 25 minutes, or until top is crisp and brown and the casserole is bubbling hot.
