1 (16 oz) package wonton wrappers
1 lb sausage
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
!/2 cup finely chopped red pepper
1/2 cup finely chopped onion

Directions:
Directions:
1. Preheat oven to 350 degrees. Spray a miniature muffin pan with cooking spray.

2. Insert wonton wrappers into muffin pan so as to form small cups. Can use a juice glass to round off tops so edges don’t burn Bake 5 minutes in oven. Allow baked wrappers to cool. Remove from pan.

3. In medium bowl, mix sausage, Monterey Jack, Cheddar, red peppers and onion. Fill baked wonton wrapper cups with the mixture. Cook in regular baking dish that has been sprayed with Pam.

4. Bake filled wonton wrappers 10 to 15 minutes, until sausage mixture is bubbly and slightly brown. Watch closely so wonton wrappers do not burn.

I use the juice glass to cut off the corners so that they will fit in miniature muffin cups. Otherwise the corners hang out and they burn before the cups are ready.

You can also substitute Italian 6 blend cheese in place of the other cheese.
