1 c. butter
1 c. powdered sugar
1 tsp. vanilla extract
2 c. flour

Filling:
1/2 c. granulated sugar
3 Tbsp. flour
juice and zest of one lemon
2 c. fresh or frozen blueberries

Directions:
Directions:
Heat over to 400º F. Coat a 9-in square baking pan with cooking spray.
In a medium bowl, using an electric mixer, beat butter, powdered sugar and vanilla until fluffy. Add the flour and beat until the mixture forms small crumbs.
Press about 2/3 of the crumb mixture evenly over the bottom of the baking pan. Set the remaining mixture aside.
Bake for 12-15 min, or until lightly browned. Reduce the over to 350º F.
To make the filling: In a medium bowl, mix the sugar, flour, lemon zest and salt. Add the eggs and lemon juice, then whisk until smooth.
Spread the blueberries in an even layer over the crust. Pour the filling over the blueberries. Sprinkle the reserved crumb mixture over the top.
Bake for 30 to 40 minutes, or until the crumb topping is golden brown.
Transfer to a wire rack to cool. Cut into squares.
