4 cups yellow squash, sliced
1/2 cup onion, chopped
1 sleeve Ritz crackers, crushed
1 cup shredded cheddar cheese, divided
2 eggs, beaten
3/4 cup milk
1/4 cup butter, melted
1 tsp salt
2 tbsp butter
Pepper to taste

Directions:
Directions:
Cook squash and onion in large skillet with small amount of water until tender, about 5 minutes. Drain. Combine Ritz crackers and cheese and mix 1/2 of the cracker mix with squash and onions. Mix together eggs and milk and pour over squash mixture. Stir in melted butter and season with salt and pepper. Spread in baking dish and cover with remaining cracker mixture. Dot 2 tbsp of butter over top and bake at 400º for 25 minutes or until golden brown.
