2 gal. tomato juice - about 2 pecks
1 1/2 pt. vinegar
3 c. brown sugar
1/2 c. mixed pickling spice
1/3 c. canning salt
2 tsp. black pepper
2 tsp. red pepper
6 large onions, chopped
1 large green pepper, chopped

Tie spices in cheesecloth. Combine all ingredients. Cook on low until onions & peppers are well done. Stir occasionally. Cook for 2 hrs.

To 2 c. of cooled juice, add 1/2 c. cornstarch. Stir into rest of juice. Cook for 20 minutes & continue to boil as juice is being put into the jars & sealed.

Process like tomato juice.

Jim & I would put out about 50 tomato plants at our first home which had an excellent spot for a large garden. BC (before children), I enjoyed coming home from work, walking out to my "back 40" to check on my garden to see what I was going to can.
