2/3 cup all-purpose flour
1 1/2 cups old-fashioned rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons unsalted butter or margerine
3/4 cup packed brown sugar
1 cup dried cherries
1 teaspoon vanilla extract
1 large egg, lightly beaten
3 ounces dark chocolate chips or chunks

Preheat oven to 350°.

In a large bowl, combine flour, oats, baking soda and salt. Stir with a whisk.

Melt the butter in a saucepan over low heat. Turn off heat and add brown sugar. Stir constantly until smooth. Add this sugar mixture to the flour mixture. Blend with a mixer at medium speed until smooth. Add the cherries, vanilla and egg; beat gently until combined. Add in chocolate at the very end and stir with a spoon.

Make dough balls with 2 tbsp of mix each. On a cookie sheet lined with parchemin paper, place and press the dough balls gently. Bake at 350° for 10-13 minutes. Allow to cool.
