1/2 c. butter, softened
1 1/4 c. sugar
2 eggs, slightly beaten
1 Tbsp. grated lemon peel
1/2 tsp. lemon extract
1/2 c. milk
1 1/2 c. all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped pecans

Directions:
Directions:
Heat oven to 350º F. Grease a 9 x 5 or 8 x 4 loaf pan.

In medium bowl, combine butter & sugar, mix well. Add eggs, lemon peel, extract & milk. Add flour, baking powder & salt, stirring just until moistened. Fold in nuts. Pour into prepared pan. Bake for 50-60 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan, invert onto cooling rack.

Great with Cherry Cheese Spread:
3 oz. cream cheese, softened
2-3 tsp. milk
1 Tbsp. chopped maraschino cherries
Combine all ingredients in small bowl until well blended. Use as a spread for Lemon Bread!

It is so hard to include salt in these recipes. Mom was on a salt-free diet for years. We never salted anything & I have found myself not even writing down the salt ingredient in recipes...

This makes for a great gift - who doesn't like lemons and maraschino cherries!
