4 T olive oil + more for greasing
2/3 c. bread crumbs
Kosher salt and black pepper
4 boneless, skinless chicken breasts (about 2 lb.)
4 heads broccoli, cut into florets ( 6 c.)
2 c. grated Parmesan cheese
1/4 c. butter
1/2 c. all purpose flour
1/4 tsp. nutmeg
Pinch of cayenne
3 c. milk
2 c. shredded sharp Cheddar cheese
1 c. chicken stock
1/2 c. dry white wine
1/2 tsp. paprika

Directions:
Preheat oven to 350º. Place rack in top third of oven. Grease a 9x13 pan with olive oil and set aside.

In medium bowl, add bread crumbs and olive oil; season with salt and pepper and set aside.

Place chicken in large pot and cover with water. Add 4 tsp. salt and bring to a boil; immediately reduce to low and simmer. Cook chicken for 15-20 minutes. Remove and cool slightly and then slice chicken into thin strips or shred. Place in bottom of prepared dish. Add broccoli and sprinkle the Parmesan over the top.

Melt butter in medium saucepan over medium heat and add flour and use wooden spoon or whisk to stir until smooth and cooked; 4-5 minutes. Add nutmeg and cayenne slowly while adding milk, Cheddar, stock and wine. Bring to a boil, whisking often. Reduce to simmer and cook until thickened and smooth; 5-8 minutes.

Pour over broccoli and chicken and top with bread crumb mixture and sprinkle paprika over top.

Cover with foil and bake 15 minutes. Remove foil and bake until top is golden and casserole is bubbling. About 15 minutes. Cool 5 minutes and then serve.
