3 egg whites
1/2 teaspoon cream of tartar
1 pound powdered sugar
1 teaspoon vanilla or almond extract
Food coloring

Directions:
Directions:
Beat egg whites and cream of tartar until stiff. Blend sugar in gradually. Add flavoring. Beat until frosting forms straight peaks.
Divide frosting into small bowls if several colors are needed. Add a few drops of food coloring to each. Keep bowls of frosting covered with a damp cloth. For decorations, force frosting through decorating tubes.
This is enough frosting for two 9-inch round layers with decorations or 2 dozen cupcakes.
