3 oz. suet (Atora)
4 oz. sugar
4 oz. self rising flour
1 tsp. bicarbonate of soda
1 tsp mixed spice
1/2 tsp ground ginger
5 fl. oz. natural yogurt
4 oz. treacle
1 egg

TOFFEE SAUCE
1/4 pint golden syrup
3 oz. soft dark brown sugar
1 1/2 oz. butter
1/4 pint single cream
2 tsp. vanilla g

Directions:
Directions:
1. Mix together suet, sugar, flour, baking soda, mixed spice, and ginger.
2. Mix yogurt, treacle, milk, and egg together.
3. Add to dry ingredients. Mix to a heavy batter.
4. Pour into an 8 x 11 swiss roll pan.
5. Bake at 350 for 30-40 minutes until firm to touch
6.. Serve cut into portions with toffee sauce.


TOFFEE SAUCE
7. Throughly mix syrup, sugar, and butter in sauce pan. Boil without stirring for 3 minutes. Remove from heat.
8. Stir in Cream and vanilla and pour over hot pudding.

We were introduced to Sticky Toffee Pudding by Ann and Arthur Jarvis, our cousins in Pitlochry, Scotland. Ann gave me this recipe, and we never had a meal together where we didn't order this dessert. Atora is a vegetable suet available in British stores or on-line. Golden syrup and treacle are similar to molasses.
