lamb
4 - 5 # boneless lamb roast
salt and pepper to taste
1 whole onion peeled
peas:
2 tbs butter
2 tbs flour
1 can peas
potatoes
semi-cooked cubed boiled potatoes

Directions:
Directions:
salt and pepper roast to taste and place in a roasting pan with onion and roast at 350 degrees uncovered for 1 hour then cover with foil and continue roasting for 45 minutes and semi cooked cubed potatoes into juice. let set for 15 minutes then slice and if not cooked enough put back in oven for a few minutes

melt about 2 tbs butter in a small fry pan and about 2 tbs of flour and brown in butter. should be a little thick. add more of butter or flour as needed to make a paste consistency of soft pudding but make sure to brown well, this is called ruesevera. then add can of peas with its juice and cook on low til it thickens. serve with lamb and potatoes.
