½ onion, diced
large handful of spinach
crumbled feta
salt, pepper, and spices to taste
water
cooking oil or spray of preference

Directions:
Directions:
1. Preheat oven to 350
Heat cooking oil in pan. Add onions.
When onions are partially cooked (before browning), add spinach and mix together.
When spinach is soft, add spices if preferred.
Remove pan from heat and allow to cool. When cool, add crumbled feta.
Cut a slit in each chicken breast and open wide enough to stuff.
Insert preferred amount of spinach/onion/cheese mixture into chicken.
Secure chicken closed with a toothpick if necessary.
In a casserole or oven safe dish, place the chicken breasts in.
Add water to the dish to avoid the chicken from drying out.
Place dish in the oven for 35 minutes.
