Cast iron skillet
Cooking oil
1 inch thick steak
Salt and pepper to taste
Garlic butter (optional but really good)

Heat oven to 450 º. Make sure oven is very hot before starting
thinly coat steak with oil
thinly coat skillet with oil
In a preheated very hot cast iron skillet seer steak for 1 minute on each side
Make sure skillet is preheated very hot.
Put skillet with steak in it into the heated oven.
Cook uncovered in hot oven:
4 minutes for rare steak
6 minutes for medium steak
8 minutes for well done steak
Use thick hot pads or double them up.
Remove from oven and take the steak out of the pan. Let rest for 2 minutes, covered.
Plate it. Spread with garlic butter if desired.
Ovens may vary but make sure the oven is very hot and test for doneness after resting.
Use a cast iron skillet that fits the size of the steaks to be cooked as close as possible. Empty space creates smoke at these high heats. Turn your vent fan on high.
