1 3/4 c flour
2 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 c milk
1/4 c oil
6 slices bacon, cooked crisp, drained and crumbled
1/4 c finely chopped red onion
1/4 c finely chopped green peppers
2 oz cheddar cheese cut into 12 cubes

Directions:

Preheat oven to 400º. Grease or line muffin tins. In medium bowl stir dry ingredients together, make a well in center. In another bowl combine egg, milk, and oil. Add egg mixture in well stir until moistened (should be lumpy) fold in bacon, onion and green peppers. Spoon half of mixture into prepared muffin cups, then place 1 cheese cube in each and rest of dough on top covering cheese, 2/3 filling each muffin cup. Bake for 20 minutes or until golden brown. Cool slightly on wire rack. Serve warm makes 12
